Need some easy dinner recipes?

If you are looking for a new cookbook to give you some simple recipes that you can get on the table in no time, look no further. If you follow socials at all, you’ll recognize Matthew Bounds and his brand Your Barefoot Neighbor. I started following in a couple of years ago and love his cooking videos. He also does so much great work in his community as well so look him up and give him a follow! I sent one of his cookbooks to my son and decided to get one for myself as well and I’m not disappointed.


There are five sections in the book, Low ‘n Slow, Sheet Pan Dinners, One Pot Meals, Rotisserie Realness and Come Fix You a Plate. I’ve made recipes from all of the sections and all have been very good. I especially like the rotisserie section. If you are a busy person (mom, dad, student, retired, whatever!) and need a shortcut recipe, this is the section for you. I’ve made at least Chicken and Stuffing and the French Onion Chicken Casserole and both were fast and easy. I love the idea of recipes developed around the rotisserie chickens so readily available in the grocery store, Wal-Mart, etc. Busy people unite!


If your slow cooker is your best friend, try the Low ‘n Slow section. There’s Beef Stew, Coconut Curry Chicken, Lemon Sun Dried Tomato Chicken, Smothered Cube Steak and Onions (my husband’s fave), and more. I love using the slow cooker because there is nothing like coming home after at long day at work and smelling a wonderful dinner that I can get on the table in just a few more minutes! It takes a little planning and preparation to use your slow cooker, but it pays off at the end of your day when dinner is minutes away. I’m a sucker for a good slow cooker meal anyway as it takes me back to my childhood when my mom made slow cooker dinners. Her most famous was Ham and Beans which she served with cornbread of course. I still make that recipe to this day and love coming home to the smell of Ham and Beans!


Sheet pan dinners are a new favorite way of cooking for me. What could be simpler than throwing everything on a sheet pan? Some of the meal kits that I get are sheet pan dinners and they’re so easy, anyone can make them. This cookbook has sheet pan options from salmon, BBQ chicken, shrimp and pork! It really is as simple as cutting up some veggies and seasoning some protein and baking it in the oven. We have a Cuisinart air fryer oven as I throw those sheet pan dinners in there especially in the summer when it can be too hot to turn the oven on. This method and these recipes would be perfect for a single person who might not know much about cooking because there’s not much technique involved. And you can impress someone with a pretty good meal without a lot of ingredients or experience.
